Marinating time chart
These are the timings chefs and food guides agree on:
- Fish, shrimp, scallops: 15–30 min (never over 1 hour — acid "cooks" the fish)
- Boneless chicken pieces: 30 min – 2 hrs
- Bone-in chicken pieces: 2 – 6 hrs
- Whole chicken / turkey: 4 – 12 hrs (overnight is ideal)
- Beef steaks (tender cuts): 30 min – 2 hrs
- Beef roast / tough cuts: 6 – 24 hrs
- Pork chops / tenderloin: 30 min – 4 hrs
- Pork roast / shoulder: 4 – 12 hrs
- Lamb: 4 – 8 hrs
- Tofu & vegetables: 30 min – 2 hrs
The golden rules of marinating
- Amount: about ½ cup of marinade per pound of meat (¼ cup per pound for fish). A zip-top bag needs far less than a dish.
- Always marinate in the refrigerator — never on the counter.
- Longer is not better: acid breaks down surface proteins; too long turns meat mushy, not tender.
- Never reuse marinade that touched raw meat — unless you boil it hard for 5 minutes first. Set some aside before adding the meat if you want a sauce.
- Score thick cuts or poke holes so the marinade reaches deeper.
- Glass, ceramic or food-safe plastic only — acid reacts with aluminum and cast iron.
Frequently asked questions
How much marinade do I need per pound of meat?
About half a cup per pound of meat or chicken; a quarter cup per pound for fish. A zip-top bag stretches it further.
How long should I marinate chicken?
Boneless pieces: 30 minutes to 2 hours. Bone-in pieces: 2 to 6 hours. Whole chicken: 4 to 12 hours — always refrigerated.
How long should I marinate beef?
Tender steaks: 30 minutes to 2 hours. Tougher cuts and roasts: 6 to 24 hours.
How long should I marinate fish?
Only 15 to 30 minutes, never more than 1 hour — the acid starts to "cook" the fish and turns it mushy.
Can you marinate meat too long?
Yes. Over-marinating in acid breaks down the surface and makes meat mushy instead of tender. Follow the maximum times in the chart above.
Can I reuse marinade?
Not safely — unless you bring it to a full rolling boil for at least 5 minutes. Better: set aside fresh marinade before the raw meat goes in.
